Q: I'm looking for a quick and easy appetizer for a party. Any
suggestions?
A: I served this baked artichoke dip to a bunch of
friends and every one of them asked for the recipe. It is always a hit!
• 1 14-ounce can artichoke hearts packed in water, well drained.
• 3 cloves of garlic
• 3 tablespoons light mayonnaise
• 8 ounces of lowfat cream cheese (softened)
• 1/4 teaspoon ground black pepper
• 1/4 cup of bread crumbs
• 5 tablespoons (packed) grated Romano or Parmesan cheese (about
1 ounce)
Preheat oven to 375°F.
Put the artichoke hearts and garlic in the bowl of a food processor.
Use the metal blade and process until well chopped. Add the mayo, cream
cheese, black pepper and 3 Tablespoons of grated cheese. Process until
mixed.
Coat an ovenproof dish with cooking spray. Spoon the mixture into the
container and sprinkle the bread crumbs and cheese over the top.
Bake dip until mixture is bubbling and bread crumbs have browned, about
20 minutes (about 30 minutes if chilled).
